Crispy on the outside, soft on the inside – yet perfectly cut: the HIKARI bread knife masters this balancing act with ease.

The precise serrated edge cuts through hard crusts as effortlessly as light dough. Its long blade made of 67 layers of Damascus steel and the amber-colored sycamore handle guarantee stable control without tearing.

Each knife is unique – with individual damask grain and a natural wood handle, which can be engraved upon request to create a truly personal work of art.

Bread knives that are blunt or too short tear open loaves and crush the inside – the result is shredded slices.

Thanks to its extra-long cutting edge and aggressively ground serrated edge, the HIKARI bread knife glides through baguettes, sourdough loaves, and even pumpkin and pineapple. The serrated edge grips the crust, while the finely ground valley between cleanly separates the inside.

This ensures that every slice retains its shape – from the first to the last cut.

Each blade is hand-ground in several steps and carefully inspected – for uncompromising sharpness and absolute control. The fine-grained structure of the Damascus steel core ensures long-lasting edge retention and can be easily resharpened as needed.

67 layers of Damascus steel with a cutting-edge core of 10Cr15CoMoV and 66 layers of corrosion-resistant 316/316L stainless steel.

The blade is vacuum-heat treated – one of the most modern hardening technologies in the world – for a particularly uniform structure, smooth surface and outstanding edge retention.

The Japanese V-grind with 15° per side ensures uncompromising sharpness. Exception: The bread knife features a single-sided 30° serrated edge.

Half bolster and full tang ensure balanced weight distribution, high stability and maximum durability even with intensive use.

The ergonomically shaped handle is made of exquisite, light-grained sycamore maple

The natural grain makes each knife unique. Multiple polishing processes create a particularly smooth surface – ensuring a secure grip and a pleasant feel, even after extended use.
