Balance for precise and creative cuts. Our Balance set combines the versatile Santoku with the specialized Nakiri from the HIKARI series. Together, they form the ideal basis for delicate vegetable cutting and safe work with fish and meat.
The knives are made of 67 layers of Damascus steel and feature an ergonomic handle made of sycamore maple. Lightweight, balanced, and comfortable to hold.

The HIKARI Balance Set combines the universal Santoku with the specialized Nakiri. Together, they deliver effortless cutting of herbs, vegetables, fish, and meat, complementing each other to form an ideal base for creative dishes.

Each blade is hand-ground in several steps and carefully inspected – for uncompromising sharpness and absolute control. The fine-grained structure of the Damascus steel core ensures long-lasting edge retention and can be easily resharpened as needed.

The blade is vacuum-heat treated – one of the most modern hardening technologies in the world – for a particularly uniform structure, smooth surface and outstanding edge retention.
The Japanese V-grind with 15° per side ensures uncompromising sharpness. Exception: The bread knife features a single-sided 30° serrated edge.
Half bolster and full tang ensure balanced weight distribution, high stability and maximum durability even with intensive use.

The ergonomically shaped handle is made of exquisite, light-grained sycamore maple
The natural grain makes each knife unique. Multiple polishing processes create a particularly smooth surface – ensuring a secure grip and a pleasant feel, even after extended use.
