The knife sharpener

Our diamond sharpening rod is the perfect tool for anyone who values ​​fast and precise knife sharpening.

Thanks to its special surface structure, you can also create very fine grinding edges and bring your knives to optimal sharpness. The rod is versatile and is suitable for all types of knives, scissors and other cutting tools. Thanks to its robust construction and durable materials, our diamond sharpening rod is a tool you can always rely on.

Note: Only 1x sanding rod in dark brown is delivered.

A diamond sharpening steel does more than realign the edge; it also removes a very small amount of material. This makes it especially suitable for controlled sharpness refreshment, particularly on hard blades, when the leather strop is no longer enough but the whetstone is not yet necessary. Use it deliberately when the knife starts to lose bite, and use it sparingly rather than as a daily routine. In practice, a few strokes per side are usually enough, with use every few weeks depending on how often you cook and what cutting board you use.

Preparation

  • Clean the blade thoroughly before sharpening and dry it.
  • Make sure the diamond sharpening steel is clean.
  • Work on a non-slip surface or hold the steel securely in your hand.

Correct sharpening angle

Hold the blade at an angle of around 15 degrees per side to the sharpening steel. For many Japanese knives, this range is a very good compromise between sharpness and stability.

Method 1: Freehand sharpening

Hold the sharpening steel vertically in front of you and stabilize it with your free hand. Place the blade at the heel and guide it down to the tip in one even movement with light pressure.

Switch to the other side of the blade and repeat the process. Repeat this two to five strokes per side. Check the sharpness in between.

Hold the blade at an angle of around 15 degrees to the sharpening steel.

Method 2: Sharpening on the work surface

Place the sharpening steel vertically on a non-slip surface. Guide the blade over the steel from top to bottom in a controlled motion. Work calmly and avoid jerky movements.

Switch to the other side of the blade and repeat the process. Repeat this two to five strokes per side. Check the sharpness in between.

Hold the blade at an angle of around 15 degrees to the sharpening steel.

This method offers additional stability and is especially suitable for beginners.

Pressure and speed

Use only light pressure. With diamond sharpening steels, the blade’s own weight is usually enough. Too much pressure can unnecessarily stress the cutting edge.

How often to use it

Use the diamond sharpening steel only when sharpness decreases. With normal household use, using it every few weeks is sufficient.

For daily care, a leather strop is often the better choice.

Important notes

  • Diamond sharpening steels remove material and should not be used as a daily routine.
  • They also work on European knives, but require especially controlled handling there.
  • Always work calmly and avoid jerky movements.

  • Clean the sharpening steel regularly with warm water and a soft brush.
