In Japanese, Nakiri means “leaf cutter” – and that is exactly what this knife was created for.

The straight blade ensures clean, vertical cuts, making the HIKARI Nakiri a specialist for vegetables and raw vegetables. Crafted from 67 layers of Damascus steel, it features an ergonomic amber-colored sycamore maple handle.

Each knife is unique – with individual damask grain and a natural wood handle, which can be engraved upon request to create a truly personal work of art.

The HIKARI Nakiri's completely straight edge allows for perfectly vertical cuts, while the high blade picks up the food in one go and feeds it directly into the pot or pan. The extra weight helps it glide effortlessly, even through carrots or squash.

The ideal knife for anyone who wants to not only cut vegetables but also shape them.

Each blade is hand-ground in several steps and carefully inspected – for uncompromising sharpness and absolute control. The fine-grained structure of the Damascus steel core ensures long-lasting edge retention and can be easily resharpened as needed.

Blade

67 layers of Damascus steel with an edge-retaining 10Cr15CoMoV core and 66 layers of corrosion-resistant 316/316L stainless steel.

The blade is vacuum heat-treated, one of the most advanced hardening technologies in the world, for an especially uniform structure, smooth surface and outstanding edge retention. With a hardness of 60-62 HRC on the Rockwell scale, it offers the ideal combination of resilience and long-lasting cutting performance.

The Japanese V-grind at 15° per side ensures uncompromising sharpness. Exception: the bread knife uses a single-sided 30° serrated grind.

Half bolster and full tang ensure balanced weight distribution, high stability and maximum durability, even with intensive use.

Handle

The ergonomic handle is made from selected, light figured sycamore maple.

The natural grain makes each knife unique. Multiple polishing steps create an especially smooth surface for secure grip and comfortable handling, even during longer use.

Suitable for left- and right-handed users.
