Santoku means "three virtues"—meat, fish, and vegetables. With its straight edge, high blade, and 67 layers of Damascus steel, it glides precisely through any type of cutting material. The amber-colored sycamore maple handle ensures balance.
Each knife is unique – with individual damask grain and a natural wood handle, which can be engraved upon request to create a truly personal work of art.

Classic chef's knives usually require rolling; those who prefer straight cuts quickly reach their limits.
The HIKARI Santoku solves this problem with a completely straight edge and a deep blade that feeds the cut food directly into the pot or pan. The thin blade core slices even raw fish with silky smoothness; at the same time, the serrated edge prevents vegetables from sticking.
This makes every dish a perfect composition, whether it's sushi, sashimi or Mediterranean salad.
Each blade is hand-ground in several steps and carefully inspected – for uncompromising sharpness and absolute control. The fine-grained structure of the Damascus steel core ensures long-lasting edge retention and can be easily resharpened as needed.

Klinge
67 Lagen Damaststahl mit einem schnitthaltigen Kern aus 10Cr15CoMoV und 66 Lagen korrosionsbeständigem 316/316L Edelstahl.
Die Klinge wird vakuumwärmebehandelt. Diese moderne Härtetechnologie sorgt für eine besonders gleichmässige Struktur, eine glatte Oberfläche und herausragende Schnitthaltigkeit. Mit einer Härte von 60 bis 62 HRC nach Rockwell bietet sie die ideale Kombination aus Widerstandsfähigkeit und langanhaltender Schneidleistung.
Der japanische V-Schliff mit 15° pro Seite sorgt für kompromisslose Schärfe. Ausnahme: Beim Brotmesser kommt ein einseitiger 30°-Wellenschliff zum Einsatz.
Halbkropf und durchgehender Erl (Full Tang) gewährleisten eine ausgewogene Gewichtsverteilung, hohe Stabilität und maximale Langlebigkeit auch bei intensiver Nutzung.
Griff
Der ergonomisch geformte Griff besteht aus erlesenem, hell gemasertem Bergahorn
Die natürliche Maserung macht jedes Messer zu einem Unikat. Durch mehrfache Polierung entsteht eine besonders geschmeidige Oberfläche für sicheren Halt und angenehme Haptik auch bei längerer Nutzung.
